Our story

Much more
than a franchise.

Kajiro Sushi was born in 2018, born from the passion of three friends for Japanese cuisine and the art of sushi. Our goal: to bring cultures together by offering an immersion in the Japanese culinary spirit, adapted to delight European palates.

At Kajiro, the founders themselves are your trainers and direct points of contact. They support you in opening your restaurant — and well beyond. You are not just joining a brand: you become part of a close-knit team, driven by a shared passion for culinary excellence.

Testimonials

They
did it.

You don't have to be a pioneer — they paved the way for you, and they are satisfied with the results.

Samuel was our very first franchisee. Already a customer at our first restaurant, he wanted to leave employment for entrepreneurship. We introduced him to our preferred banking partner — who granted the loan where his regular banks had been reluctant — helped him write his business plan and contributed financially to the overall budget. A year and a half after opening, Tain generates €370K in revenue excluding VAT, despite starting from scratch.

Kajiro Tain-l'Hermitage — 2022

Introduced by Maximilien Haibi, co-founder

The Kajiro Sushi franchise was a reassuring solution for navigating the challenges of opening a Japanese restaurant. A fan of this cuisine without a professional background, I received the support needed to put the project together, training beforehand and constant guidance. I was assisted with the business plan and banking interviews — Maximilien came in person and was able to convince them of the brand's performance. As planned, we had customers from day one, with an average monthly revenue exceeding €55,000 excluding VAT.

Unlimited growth

And after the
restaurant?

Samuel's success at Tain-l'Hermitage did not stop at his restaurant. Once his establishment became profitable and self-sufficient, he had time to grow further: in collaboration with Kajiro Sushi, he launched Shôyô Sushi — fresh sushi kiosks in supermarkets.

This new venture now brings him close to €80,000 in additional monthly revenue. Proof that a Kajiro franchisee can build far more than a single point of sale.

Frequently asked questions

Your questions,
our answers.

Can I open a franchise without experience in the restaurant industry?+

Yes! You can open a franchise even without prior experience. We offer comprehensive training from A to Z. However, it is important to be prepared for the demanding pace of the sector: split shifts, evening and weekend work, and public holidays. Be ready to work on Valentine's Day, our busiest day of the year!

What is the initial investment required?+

A minimum personal contribution of €30,000 is required, with an overall budget ranging between €120,000 and €200,000 to launch your franchise.

What are the revenue prospects?+

We estimate that a franchise can achieve an average revenue of €300,000 after one year, and €400,000 after two years.

What guarantee do you offer?+

Entrepreneurship carries risks; however, we minimise them through our experience, concrete data and expertise that we share not only before, but also after your franchise opens.

I am a manager at McDonald's — can I become a franchisee?+

Absolutely, your profile is ideal. We welcome managers from diverse backgrounds, each bringing their own expertise.

Where can I set up my franchise?+

The choice of location is crucial and accounts for 50% of your success. We have identified potential target areas, but we remain open to your geographic preferences, provided you stay flexible.

What happens if I cannot secure financing?+

We have always managed to obtain the necessary financing for our franchisees — it is an integral part of evaluating your application. Kajiro Sushi can also invest directly to support the project. If financing still falls through, we can defer the project or end the process on good terms.

How long is the required training?+

Training lasts two months and covers all aspects of running a Kajiro Sushi franchise, from food preparation to operational management.

How does Kajiro Sushi support its franchisees?+

Kajiro invests around 15% in the capital of each franchise, demonstrating our commitment to the success and sustainability of every establishment. This support includes ongoing assistance with management, marketing and operations.
