We can't wait to open
In mid-March, when we'd just learned that restaurants had to close, we made the decision not to continue takeaway and delivery activity. On one hand because we weren't comfortable with the risk to the team coming to work, and on the other because we weren't sure we could pay salaries with the orders we'd have had.
Since then, you've often asked us whether we delivered, but we were waiting for the lifting of lockdown to be announced so that the order volume would be sufficient. So this day has finally arrived. So, like you, it's a bit of a cold shower after Edouard Philippe's announcements, but we sort of expected it. We don't know much, but it lets us open :)
We want to, we need to, we can't wait to see you again and to finally reopen in Condrieu!
12 or 13 May depending on the restaurant
Vienne, Roussillon and Lyon will open from Tuesday 12 May, lunch and dinner, and resume their usual opening hours.
Condrieu will finally resume from Wednesday 13 May lunchtime, then open from Wednesday to Sunday (closed Sunday lunchtime).
We may adapt the hours depending on developments, but for now we're keeping the same hours.
Takeaway and delivery
We'll offer the entire menu for takeaway and delivery. We'll ask you to favour anticipated online orders and, if possible, online payment. That way you'll need to spend less time in the restaurant and we'll avoid potential transmission media (cash, cheque, meal vouchers).
Online order
We'll nonetheless also accept the other means of payment and counter orders. We've bought equipment to do it safely, for us and for you.
Contactless delivery
Delivery orders will have to be paid in advance, as has been the case for a few months, and the delivery drivers will follow the recommendations for contactless delivery: - delivery at the bottom of buildings so as not to touch the intercom
- the bag is placed on the roof or in the driveway and the driver steps away to respect the one-metre distance.

The precautions put in place
Your health and that of the teams is a priority, and we've designed a protocol to best guarantee the limitation of transmission risk.
Mask mandatory for all team members.
We'll be equipped with washable masks compliant with the Afnor standard, with a waterproof fabric forming a barrier to the micro-droplets that can be in the air.
- No contamination between us
- No contamination of food
We won't make wearing a mask mandatory to come and collect orders, but it will be strongly recommended. We don't rule out making it mandatory if we judge that certain behaviours present risks for other customers or the teams.

Plexiglass separation screen — At least one of the tills will be equipped with a plexiglass screen to reduce the possibility of transmission as much as possible. Only this one will allow paying on site and taking orders.
Hydroalcoholic gel
Gel will be made available in the customer area and of course for the team. An alarm will be set up to remind people in the kitchen to wash their hands at regular intervals, and the people at the till will disinfect the card terminal after each use and their hands after each cash or meal-voucher payment.
Antimicrobial adhesive
It seems an adhesive can eliminate 99.9% of bacteria, and that it would also work for the virus. We're going to put some on the entrance door handles to, again, best limit the transmission risks.
Order collection protocol
Still to guarantee the barrier measures, we'll suggest you proceed as follows:
- Online order as much as possible
- On-site order on your smartphone from our online ordering site if you agree
- Till order limited as much as possible
- Contactless payment as much as possible (online or on site), but other means accepted
- Once the order is finished it will be placed on a table and you can take it once the server has stepped a metre away.
- Waiting at defined spots when possible, and outside if the premises or the number of people inside require it.
The human must remain the rule
We've set out the organisation, the rules that seem to us to best protect you as well as the teams. Nonetheless, we want to be able to keep a warm welcome, a pleasure in seeing each other again, and to adapt to everyone's needs.
We're all eager to resume and we hope it's mutual. Take care of yourselves and eat plenty of sushi :)
